Unsalted butter2 tbsp
Dark chocolate (70% cocoa solids), chopped into small chunks40g
Caster sugar2 tbsp
Egg yolk1
Whole or semi-skimmed milk3 tbsp
Self-raising flour2 tbsp
Cocoa powder1 tbsp
Dark, milk or white chocolate20g
Vanilla ice cream (optional)To serve

Put the butter and 40g dark chocolate in a large mug (at least 300ml). Microwave for 20 seconds. Stir, then microwave for 10-20 seconds more, until melted, being careful not to burn.


Add the sugar, egg yolk and milk; mix with a fork. Add the flour, cocoa and a pinch of salt; mix again until you have a smooth batter, making sure to scrape down the side of the mug. Chop the 20g chocolate into small chunks and stir in.


Microwave on medium power (450W) for 2 minutes-2 minutes 30 seconds, or until set on top. (Microwaves vary, so it’s best to check after 1 minute 30 seconds, then blast again in 30-second increments.) Enjoy in pyjamas on the sofa, perhaps with a scoop of ice cream on top.
