Blitz the fresh mint and sugar in a food processor until fragrant and lightly green. Toss with the halved strawberries, then set aside for 30 minutes until glossy and syrupy.

Whip the double cream and vanilla bean to soft peaks.

Spoon a generous scoop of the vanilla cream into each bowl.

Top with the macerated strawberries and finish with extra syrup.
